Description

Creamy, chocolatey, and packed with crunchy almonds, these Keto Chocolate Almond Ice Cream Bars are a perfect low-carb dessert for any time of year. With just a handful of ingredients, you’ll enjoy a rich, indulgent treat without the guilt!

Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • ⅓ cup erythritol (or your favorite keto sweetener)
  • ¼ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • ½ cup crushed almonds
  • ½ cup sugar-free chocolate chips (for dipping, optional)
  • 1 tbsp coconut oil (if dipping in chocolate)

Instructions

  • Mix the Base: In a large mixing bowl, whisk together heavy cream, almond milk, erythritol, and cocoa powder until smooth and well combined.
  • Add Flavor: Stir in vanilla extract and crushed almonds for a nutty crunch.
  • Pour and Freeze: Pour the mixture into ice cream bar molds and insert sticks. Freeze for at least 4-6 hours or until completely set.
  • Optional Chocolate Dip: Melt sugar-free chocolate chips with coconut oil in a microwave-safe bowl. Dip the frozen bars into the chocolate mixture and place them on parchment paper. Freeze again for 20 minutes to harden the chocolate shell.
  • Serve and Enjoy! Remove from molds and enjoy your homemade keto ice cream bars.

Notes

  • Variations: Swap almonds for pecans or walnuts. For a dairy-free version, use full-fat coconut milk instead of heavy cream.
  • Tips: Use silicone molds for easy removal. Let bars sit at room temperature for 2-3 minutes before eating for a creamier texture.
  • Allergy Info: Contains nuts and dairy. Substitute almond milk with oat milk if needed.
  • Adjustments: Add more sweetener for a sweeter taste, or reduce cocoa for a milder chocolate flavor.
