Egg Mixture:

  • 6 large eggs
  • ¼ cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder

Cheese & Sausage:

  • ½ lb ground breakfast sausage (cooked and crumbled)
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 2 tbsp cream cheese (softened)

Optional Add-ins:

  • 2 tbsp chopped green onions

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 12-cup muffin tin or line with silicone baking cups.

Step 2: Cook the Sausage

  1. In a skillet over medium heat, cook the breakfast sausage until browned.
  2. Drain any excess fat and set aside to cool slightly.

Step 3: Mix the Eggs & Cheese

  1. In a large bowl, whisk together the eggs, heavy cream, salt, black pepper, and garlic powder.
  2. Add cheddar, mozzarella, parmesan, and softened cream cheese, mixing until well combined.

Step 4: Assemble & Bake

  1. Evenly distribute the cooked sausage into the muffin tin.
  2. Pour the egg mixture over the sausage, filling each cup ¾ full.
  3. Bake for 18-20 minutes, or until the eggs are set and slightly golden on top.
  4. Let them cool for 5 minutes before removing from the muffin tin.
